My hometown is rich in Mackerel Fish(马鲛鱼), Shua Guang Fish(沙光鱼), Flathead Fish(狗腿鱼), Cymoglossus robustus(踏板鱼), hairtail(带鱼), Big Yellow Croaker(大黄鱼), Small Yellow Croaker(小黄鱼), Swimming Crab(梭子蟹), XiaPoPo(虾婆婆), Octopus(章鱼), Prawn(东方对虾) and many many other kinds of marine products. The English names of these kinds of fish may not be exactly correct, because nearly all of them only produced by my hometown and I eat them almost everyday before I come to Beijing. They are so delicious that I miss my hometown very much.

Do you have any favorite recipe for cooking seafood that you could share? I am not a very good cook, but I remember when I had a Chinese roommate that he loved to cook and was very good at it. He used a lot of vegetables and only very little meat. Very healthy.
I like to cook crab and dip it in hot butter. When cooking cod or halibut I like to deep fry in oil (we call this fish + chips, the chips being potatoes) Salmon I like to put on the hibachi wrapped with tin foil-using garlic for seasoning and a layer of mayonnaise keeps all the juices inside.
I have a Philippino friend who likes the small fish dried, I am not a big fan of that, but I do like sardines and fish maw soup.
Do Chinese eat sushi like the Japanese? (sorry if this is a stupid question)
It's rather easy to cook crab. We boil it with some salt, shallot and ginger. We eat the meat with table vinegar. It's the most delicious food I've ever eat. Even better than Roast Beijing Duck. A normal crab weighs at least 500 gram especially in spring, the crab spawn is even more yummy.
I don't like fish deep fried. Not very healthy.
